Hyde Opens First Location in Sydney with Hyde Hacienda Sydney Bar + Lounge

The Award-Winning International Nightlife Brand Hyde to Relaunch Renowned Bar Hacienda Sydney, the Brand’s Third Opening in the Last Six Months.


sbe, the leading international lifestyle hospitality group that develops, manages and operates award-winning venues and Accor have unveiled their latest Hyde partnership. Situated in the Pullman Quay Grand Sydney Harbour, Hacienda Sydney, the renowned South American-inspired vista bar, will relaunch as Hyde Hacienda Sydney Bar + Lounge on 15 November 2019. Following the Accor acquisition of a 50% stake in sbe in 2018, the partners continue to expand the Hyde nightlife brand in Australia with this, their third Australian opening. The expansion strategy saw the launch of Hyde Paradiso (Gold Coast) in April 2019 and more recently Hyde Perth Kitchen + Cocktails in October 2019.

Hyde Lounge in Los Angeles first opened in 2006 and has since expanded the concept to include Hyde Beach at SLS South Beach in Miami, Hyde Bellagio in Las Vegas, Hyde at T-Mobile Arena, Hyde American Airlines Arena, Hyde Lounge at STAPLES Center, Hyde Paradiso on the Gold Coast and Hyde Perth in Australia.


Accor’s Chief Operating Officer Pacific, Simon McGrath, states: “Following the success of our newly launched Hyde Paradiso on the Gold Coast and Hyde Perth Kitchen + Cocktails in Perth, we’ve decided to rebrand our iconic Hacienda Sydney to Hyde Hacienda Sydney Bar + Lounge. Hyde will bring a new level of energy, excitement and sophistication to Sydney’s sought-after CBD nightlife, creating a new era of hospitality for domestic and international guests.”


Hyde Hacienda Sydney Bar + Lounge will cultivate a new and refined identity, whilst building on the original vintage vibe inspired by 1950’s Miami hotels, and the lux yet playful ambience it’s known for. The new lounge area will increase the seating capacity, with those jaw dropping floor-to-ceiling windows framing the world-class view overlooking Circular Quay and Sydney Harbour Bridge.



Building on the success of Hacienda Sydney and its numerous accolades, including Most Instagrammable Cocktail in Australia (Daily Mail) and The 12 Most Instagrammable Restaurants in the World (Vogue), Hyde Hacienda Sydney Bar + Lounge will introduce a new, unique cocktail menu by Tim Philips-Johansson, Senior Consultant – Sweet&Chilli. With more than 17 years’ experience in hospitality and cocktails, Tim is Australia's most awarded bartender and he brings a wealth of experience to Hyde Hacienda Sydney Bar + Lounge, having opened some of the most successful bars on the planet. A sneak peek at some of the hero cocktails include Coffee & Malt Old Fashioned (a twist on an old fashion classic with a hint of Espresso Martini – a bourbon and coffee lovers delight!); Chia Daiquiri (infusing rum with the sweetness of strawberries and rose and served with a chia roll-up for a playful twist reminiscent of childhood playground swaps); and Pimm’s Smash (a summer punch mash-up with pomegranate and watermelon). 


In response to Australia’s demand for more hybrid dinner, drinks and dancing venues, Hyde Hacienda Sydney Bar + Lounge will have a focus on superior table service, private booth hire, weekend DJs, bar theatrics and a premium beverage offering. There will also be exclusive packages available to book, such as the ultimate hen night package ‘Hyde the Bride’ featuring mini cocktail shots on arrival, bridal sash’s, Champagne, canapés and a photo-worthy grazing table.  The ‘Veuve Clicquot Package’ includes bottles of luxury Veuve Clicquot Champagne, a personal bartender, canapé selection and unlimited popcorn from a branded Veuve Clicquot cart. The ‘Bottomless Chandon Brunch’ features bottomless Chandon Rosé and shared South American brunch style canapes as well as the opportunity to upgrade to more premium cuvees. The food menu combines fresh local produce with South American influences, and newly appointed Executive Chef, Steven Hartert, has created dishes that are ideal for sharing. Drawing inspiration from diverse cultures and cuisines spanning north, central and south America, the new menu features a host of small and large dishes, including Slow-braised beef short rib taco; Toasted ‘Cubano’ sandwich with double smoked ham, roasted pork, hot salami and swiss cheese; and Roast chicken stuffed empanadas.

The next Hyde Hotel & Residences opening is scheduled for the end of the year with our third project, Hyde Beach House in Hollywood, Florida.
